Easy Chicken Kebab Flatbreads

A quick, family-friendly fakeaway made with chicken mince and Italian Vince, cooked on one tray and loaded into warm flatbreads with cucumber, pickled red onion and garlicky yoghurt.
Serve with seasoned wedges for an easy dinner, or swap the flatbreads for rice.

Ingredients
For the chicken kebab
- 1 packet Italian Vince
- ½ cup boiling water
- 450 g chicken mince
- Olive oil, for brushing
- Salt and pepper, to taste
For the garlic & parsley yoghurt
- 200 g Greek yoghurt
- 1 garlic clove, crushed
- Small handful fresh parsley, finely chopped
- Salt and pepper, to taste
Dairy-free option: I used Raglan Coconut Yoghurt Greek Style, which worked really well.
Tip: Double the yoghurt mixture if you want extra to serve as a dipping sauce for the wedges.
To serve
- Flatbreads
- Seasoned potato wedges
- ½ cucumber, sliced
- 1 small red onion, thinly sliced
- ½ lemon
Method
- Preheat the oven to 200°C.
- Add the Italian Vince to a bowl with ½ cup boiling water. Stir, cover and leave to sit for 4 minutes.
- Add the chicken mince to the prepared Vince and mix together well. Season with salt and pepper if needed.
- Line a small baking tray, approximately 15 × 25 cm, with baking paper.
- Press the chicken mixture evenly into the tray.
- Use a knife to score the mixture into long strips, then make shallow lines across the top to give it a kebab-style finish.
- Lightly brush the top with olive oil.
- Bake for 20 minutes.
- If there is a lot of liquid in the tray after 20 minutes, carefully drain it off.
- Turn the oven to grill and cook for a further 5 minutes, until the top is nicely browned.
- While the kebab is cooking, mix together the yoghurt, garlic and chopped parsley. Season with salt and pepper to taste.
- Toss the thinly sliced red onion with the juice of half a lemon and a pinch of salt. Leave it to sit while everything else finishes cooking.
- Serve the chicken kebab in warm flatbreads with sliced cucumber, pickled red onion and plenty of garlic parsley yoghurt, with seasoned wedges on the side.
Serving idea
For a different option, skip the flatbreads and serve the chicken kebab over rice, topped with the cucumber, pickled onion and garlic parsley yoghurt.
