Halloumi, Zucchini and Vince Fritters

Ingredients

  • 2 medium zucchini, grated
  • 1 tsp salt
  • 180g halloumi, grated
  • 1 egg
  • ½ cup flour
  • 1 tsp baking powder
  • ½ cup dry Italian Vince
  • Olive oil or butter, for cooking

To serve (optional but highly recommended):

  • Poached eggs
  • Crispy cos lettuce or simple side salad

Method

  1. Prep the zucchini
    Grate the zucchini into a bowl, sprinkle with salt, and let it sit for about 10 minutes.
    Then squeeze out as much moisture as you can 
  2. Build the mix
    Add the grated halloumi and egg to the zucchini. Stir to combine.
  3. Add the dry ingredients
    Mix in the flour, baking powder, and dry Italian Vince.
    Stir until everything is evenly combined.
  4. Cook the fritters
    Heat a pan over medium heat with a little oil or butter.
    Spoon 1/3 cup mixture into the pan and flatten until thin (1/2 cm).
    Cook until golden brown on both sides.
  5. To finish 
    While the fritters cook, poach your eggs.

To Serve

Stack the fritters, top with a poached egg, and add a handful of crisp cos lettuce or a simple salad.

Cut into that egg and let it do its runny, glorious thing over the fritters.
