Vegetarian Burrito Bowl

This easy Vegetarian Burrito Bowl is loaded with veggies, hearty black beans and Mexi Vince for a seriously satisfying lunch or dinner. Perfect for meal prep or those nights when you want something healthy without spending ages in the kitchen.

Ingredients

Serves 2

  • 1/2 cup Mexi Vince
  • 1/2 cup boiling water
  • 1/2 cup black beans
  • 2 cobs sweet corn
  • Shredded lettuce
  • handfull of cherry tomatoes, diced
  • 1/2 capsicum, diced
  • 1/4 red onion, diced
  • Guacamole
  • Corn chips, roughly crushed
  • Fresh coriander

Optional:

  • Rice or quinoa
  • Lime wedges
  • Jalapeños
  • Sour cream or yoghurt

Method

  1. Add Mexi Vince and boiling water to a bowl. Stir well and leave for a few minutes to absorb.
  2.  

    Slice the kernels from the cob. Grill the corn until lightly charred.

  3. Stir the black beans through the prepared Mexi Vince.
  4. Divide lettuce between bowls (Or rice or quinoa if using).
  5. Add tomato, capsicum, grilled corn and crushed corn chips.
  6. Spoon over the Mexi Vince mixture.
  7. Finish with red onion, guacamole, coriander and a squeeze of lime.

Tips

  • Great for meal prep lunches.
  • Add extra chilli if you like a bit of heat.
  • Keep corn chips separate until serving to stay crunchy.
