Vince Split Muffin

A quick, protein-packed meal made with Classic Vince and beef mince, served on toasted muffins with fresh toppings. Perfect for lunch, dinner, or an easy weekend meal.

Ingredients

Vince mixture (vegetarian option, toast muffins and top with Vince + ingredients)

  • 1 packet Classic Vince

  • ½ cup boiling water

  • 200g beef mince

Fresh salsa

  • ½ red capsicum, diced

  • ½ cucumber, diced

  • ½ red onion, finely diced

  • Small handful parsley, chopped

  • Seasoning
  • Optional - Olive oil and lemon juice

To serve

  • 4 English muffins, split (8 total)

  • Hummus

  • Salsa

  • Greek yoghurt


Method

  1. Rehydrate the Vince
    Place Classic Vince in a bowl and add ½ cup boiling water. Stir and leave to sit for a few minutes until softened.

  2. Prepare the salsa
    Dice the capsicum, cucumber, red onion and parsley. Mix together in a bowl.

  3. Combine with mince
    Add the hydrated Vince to the beef mince and mix well until evenly combined.

  4. Assemble the muffins
    Place a couple of spoonful's of the Vince and mince mixture onto each split muffin. Press down gently with a spoon.

  5. Cook
    Grill or cook in a hot pan until the mince is cooked through and the muffins are golden on both sides.

  6. Serve
    Top with hummus, salsa and a dollop of Greek yoghurt. and season.
